a) Kadar total asam buah jeruk sebelum penyimpanan

KTA  =(6,2 x 0,1 x 1,67 x 4)/4 x 100%

= 1,035 x 100 %

= 10,35 %

b) Kadar total sam buah jeruk setelah penyimpanan

KTA  = (0,6 x 0,1 x 1,67 x 4)/4 x 100%

= 0,1002 x 100 %

= 10,02 %

c) Kadar vitamin C buah jeruk sebelum penyimpanan

Vitamin C =mg asam ascorbat x 100/A x 100/B

=4,5/0,1 x 0,88 x 100/25 x 100/4000

= 39,6 x 4 x 0,025

= 3,96 mg/ml

d) Kadar vitamin C buah jeruk setelah penyimpanan

Vitamin C =mg asam ascorbat x 100/A x 100/B

=1,4/0,1 x 0,88 x 100/25 x 100/4000

= 12,32 x 4 x 0,025

= 1,232 mg/ml
